Healthy Pasta: Easy Baked Manicotti
1 can pasta sauce, divided
1 egg, lightly beaten
1 3/4 c ricotta cheese
1 1/2 c shredded mozzarella
1/2 c grated parmesan cheese
1/2 c onion, diced
1 clove garlic, minced
4 c fresh spinach, wilted (or use 1 package frozen spinach) if desired
Preheat oven to 350F. Spread ¾ of a cup of pasta sauce in the bottom of a 13×9 inch baking dish. Mix egg, cheeses and vegetables until well blended. Spoon cheese mixture into manicotti shells one at time, squeezing cheese mixture into both sides of each shell. Place manicotti over sauce in baking dish; pour remaining pasta sauce over manicotti. Cover with foil. Bake 40 minutes or until heated through. Serves 6, 2 manicotti each.
For a healthier choice use low fat versions of the ricotta and mozzarella cheese. It will not be as melty as the regular cheese.
