Healthy Banana Muffins

Banana Spice Muffins

1 1/4 c. whole wheat flour

1/3 c. cornstarch

2 tsp. ground cinnamon

2 tsp. baking soda

1/3 c. oat bran

3/4 tsp. ground ginger

3 large very ripe bananas, peeled

3/4 c. frozen unsweetened apple juice concentrate

2 large egg whites

3 tbsp. canola oil

1/2 tsp. vanilla extract

Preheat oven to 375 F.  Spray muffin pans with non stick cooking spray.  Sift together flour, cornstarch, cinnamon, ginger and baking soda.  Stir in the oat bran and mix well.  Set aside.  In a food processor or blender combine bananas, juice concentrate, egg whites, oil and extract.  Puree until smooth.  Stir the liquid mixture into the dry ingredients.  When well mixed, fill muffin pans with the batter.  Bake for 25 to 30 minutes.  Let muffins cool slightly before removing from the pan.  Makes 12 muffins.

These muffins have fibre and potassium.  They are also low in cholesterol and sugar for those watching their diets or with health problems.  You can add nuts for a nutritional boost and chocolate chips so the kids will like them too!
